Description
The turmeric roots are harvested during winter after the plants have died down, then dried for a few days to several weeks. Commercial processing involves curing the rhizomes to gelatinize the starch, produce an attractive product, and remove the raw earthy odor, diffuse color evenly, and remove wrinkles, making them suitable for polishing. To achieve this, the rhizomes are boiled in water for 45 minutes to an hour. In India, commercial operations use cross-flow hot air at a maximum temperature of 60°C or sun-dry the turmeric during the middle of summer, which takes around 10 to 15 days.
